The ‘it’ spot in Cairns for healthy breakfast and lunch that packs local flavour, the menu at Mama Coco is as delicious as its gets. We chatted to Davy O’Rourke to see what it takes creating the most sought-after eats, day-in, day-out.

What's makes you stand out in a competitive market?

The best hospitality is found in the home, and this is the customer approach ingrained in Mama
Coco. Our menu is designed with clean and tasty flavours, catering to healthy, adventurous and conservative tastes. 

What does it take to run a successful hospitality business in this digital day?

Our people.  Attracting the right staff and building an environment where they feel creatively valued means they thrive at work. Consistency is key and increasing brand awareness means more customers know what we’re about – homely and honest food. We spend a lot of time in the social space, both online and at community events talking to the people who support our business.  

What three things do customers want to see when they walk through your doors?

Bubbly staff and delicious, healthy food catering to a variety of tastes and dietary requirements. Most importantly, flexibility – we’re adaptive and don’t do a one-size-fits all approach.

What food and dining trends are shifting the hospitality scene?

People want more plant-based, vegan and healthy options. Customers are becoming more discerning with their food choices. 

What does Bartercard do for your business, and how have you spent trade dollars to conserve cash? 

Bartercard attracts new customers to Mama Coco who are supportive and help spread the word – which in turn attracts new cash customers.  It also fills off-peak times, creates a buzz and maximises business. I’ve spent my trade dollars earnt from Bartercard customers on advertising, promotions, car servicing, bookkeeping and equipment, conserving around $100,000 in cash since I joined in 2009.

B’Hive Hair and Beauty opened its doors in September 2012 and hasn’t stopped creating beautiful styles since. Having the latest looks on lock down (covering the full spectrum of colour, extensions and bridal) B’Hive is the creation of Bri Blackmore.

What led you to open B’Hive?

I come from a family of hairdressers and grew up in a salon, so when I settled in Cairns, opening B’Hive was the next logical step. I love to make people happy and having the salon lets me do that in my own way - through good old fashioned customer service.

What makes you stand out in a competitive market?

The smallest things make the biggest difference. We serve complimentary homemade slices with tea and coffee, wine with cheese and crackers and beer with peanuts and jerky. Every customer receives VIP treatment. I have a positive and dedicated team which creates a great atmosphere in the salon.

What does it take to run a successful beauty business?

Passion and constantly staying in the loop. My team and I are always attending courses or fashion shows to gain industry insight and stay across the latest trends. Confidence is key and speaks volumes.

What trends are shifting the beauty scene?

Thermally activated mood colour is exploding at the moment – it’s not just an Instagram craze! It’s a dye that changes colour when heat is applied – from purple to pink or peach to smokey grey.  Sulphate and paraben-free hair care is also picking up - these products are also vegan-friendly so all in all customers are conscious of what they’re using.

What does Bartercard do for your business, and how have you spent trade dollars to conserve cash?

Bartercard has been amazing for my business. I earn trade dollars every time I see a client on Bartercard which I’ve then spent on business expenses like marketing and equipment to offset cash costs. I’ve met some of the most amazing and inspiring business owners to swap ideas and my new cash clients where referred to me by Bartercard members. I have so much I want to do in my business and look forward to meeting even more Bartercard members to help me achieve that. Salon renovations are next on my list and I’ll be paying for a chunk of the cash costs on Bartercard to get a slick new salon without the cash blow out. I’ve even found time once a month to get a relaxing massage on Bartercard.
